Lentil Soup


It has taken me many years to become confident enough to put this together, mainly from prayer.

The Book ``Diet For A Small Planet'' first started me on the path to making my own lentil soup, but I did not have any desire to create a recipe until just recently. I think fresh food is better than cooked food as far as health goes, but I could not come up with a good way to eat lentils raw. So, here is the best way (according to what I know) to eat them.

Recipe 4:

Lentil Soup


Spices (preferably organic):

1 pinch cumin
½ tsp chili powder
1-2 pinches cayenne pepper (or to taste)
2 tsp fresh or dried basil
2-3 tsp sea salt (to taste)
1 bay leaf
All other ingredients:

1 lb green lentils, dry 2 cups
1 large can organic tomatoes
2 medium onions
½ bulb garlic
Soak lentils overnight in water, enough to cover by an inch.

The next day, add water to cover lentils, and add all ingredients, boil, simmer, eat.

One should not attempt to achieve perfection, because, if successful, all subsequent results will be disappointing.
