Organic Potato Soup
The good thing about this dish is that it uses ingredients which most of us have on hand most of the time, and vegetables which are easily substituted. Not only that, but even when it seems like the pantry is empty, it is usually possible to find a few potatoes, a carrot, onion, and this is enough.
This soup can serve as an entrée, be served with bread, and makes hearty. Ward's is an aromatic version of the recipe in the book ``Diet For A Small Planet'', but as in the book this soup is very good when seasoned with just salt and pepper. It is even better when seasoned as here shown.
Heat a large pot on medium high heat, and add 2T organic butter, garlic, and onion. Sauté until onion is translucent, and add vegetables, spices, and enough water to amply cover vegetables. I use water from my well. Add sea salt to taste and pepper to taste and bring to a boil, keeping near-boiling for 20 minutes or long enough to cook potatoes.
2-3 large organic potatoes, diced
2-3 cloves organic garlic, chopped
1 medium organic onion, sliced
2 stalks organic celery, diced
1 medium-large organic carrot, sliced
1 large bay leaf
up to ¼ tsp organic oregano
up to ¼ tsp organic basil
2 pinches of marjoram
sea salt to taste
pepper to taste
3 T butter (organic)
½ cup goat's milk (organic)
