Chicken Chop Suey


This is a trial and error recipe which works with some variations as well. When we watch cooking shows on TV, a stir-fry is often seen. But it is still a little more difficult to make up your own recipe than it appears. Garlic and ginger are common ingredients in this kind of recipe, and they may be used either separately or together. Organic soy sauce is a new ingredient which I have seen only recently, but it makes a healthy seasoning.

Chicken is famous for the salmonella poisoning associated with it. When you cook chicken therefore, smaller pieces will ensure that the middle of the meat is heated nearer to the temperature of the outside of the meat, so that if the outside is hot enough to kill the bacteria, so may the inside be also. Salmonella poisoning may linger for two weeks in the event that it happens upon you. God bless you.

Chicken Chop Suey


1 deboned organic chicken breast (more or less)
1 small organic onion, halved and sliced
3 cloves organic garlic, chopped
12 small slices of ginger
3 dashes organic soy sauce
1 T organic butter
¼ large organic green pepper
2 small handfuls organic bean sprouts
2 large (or 6-8 small) white mushrooms, sliced
Using the wok:

Heat the wok to medium-high, add butter, garlic, and onion. Sauté, adding chicken breast sliced in strips across the `grain' before the garlic gets brown.

Cook chicken strips until nearly done, then add the remaining ingredients.

Cook until green pepper is starting get limp. Reduce heat to low and serve.

Season with soy sauce when eating. I like maybe a couple of dashes of soy sauce on a small serving.


The idea is to put the green peppers in last so that they are somewhat crisp when served. Fresh bean sprouts may be added to leftovers when reheating.

Chicken pieces cook more readily when they are smaller. It is better to cook chicken a little longer if there is any doubt about salmonella. When the chicken pieces get firm they are likely done, but they should not have any pinkness in the centre. A little experience goes a long way here.
